Old Fashioned Oat Meal
Start with steel cut oats -
I cook them according to package directions, but use 1/2 water and 1/2 almond or coconut milk. You can also cook steel cut oats in the crockpot overnight for a hearty, hot breakfast ready first thing in the morning.
The measurements are a bit different for the slow cooker:
Coat the inside of your slow cooker with butter, so the oats don't stick. Add 8 1/2 cups of water, 1 3/4 cups of milk of your choice and 2 cups of steel cut oats, along with a little sprinkle of sea salt. Cook on low 7-8 hours or until oats are creamy.
Be sure to provide lots of "toppings."
My favorites are maple syrup, vanilla, butter, cinnamon, a sprinkle of sea salt, and walnuts.
Fresh fruit is also yummy.
Lunch
Mixed Green Salad with Hard Boiled Eggs
Mixed greens
cucumber slices
spring onions
vine ripened tomatoes
hard boiled egg slices
feta or crumbled goat cheese
olive oil and red wine vinegar
Toss the greens and veggies together with the olive oil and vinegar. Garnish with slices of hard boiled egg and crumbled cheese. (And maybe some home made croutons from yesterday's lunch)
Dinner and Dessert
Hearty Beef Stew (Recipe from The Organic Momma)
2 lbs organic grass fed stew meat, or organic grass fed chuck roast, cut into stew sized cubes
3 large organic carrots or 4 medium organic carrots, peeled and chopped
6 small organic gold potatoes or 3 medium sized organic russet potatoes, cut into cubes
1 large organic onion
2 tsp organic thyme
2 tsp organic rosemary
1/2 lb organic green peas
1 tsp sea salt
1 tsp organic black pepper
2-4 tbsp organic butter
Approximately 1 quart spring or filtered water
Saute the onion and brown the beef in the butter. Then add all ingredients except for peas and bring to a boil. Simmer until the beef is fork tender. 20 minutes before serving, add the peas.
I try to make this a bit ahead of time and let it simmer on the stove for a couple of hours to incorporate all the flavors. It is really tasty.
Ok - I promised you a sweet treat! These Coconut Flour "Snickerdoodles" from The Organic Momma - are amazing!!
Using coconut flour is very different from using any other flour to bake, so don't just try to substitute with it. You need specific coconut flour recipes. This one works! I am posting an Amazon link for Rapedura, which is the sugar I use for this recipe. Treat yourself to these - you did great for an entire week!!
3/4 cup Rapedura
4 eggs
1/2 tsp organic vanilla extract
1/4 tsp sea salt
1/2 cup organic, unrefined, extra virgin coconut oil
3/4 cup Coconut flour
2 tbsp Rapedura (set aside)
2 tsp organic cinnamon
Directions:
Beat the sugar, eggs, vanilla, salt and butter together. Mix well.
Incorporate the flour and mix well. leave it to rest for 5 minutes.
In the meantime, mix together the cinnamon & sugar in a bowl. Form the dough into small balls. (It will be very sticky, it’s ok!)
Next, roll the balls into the cinnamon sugar mixture, put on a cookie sheet, and flatten with a fork.
Bake for 15 minutes at 375 degrees.
