**Dinner in the crock pot today so you can enjoy your Saturday**
Breakfast
Kitchen Sink Scrambled Eggs
It's the end of the week - you guys are doing awesome!! Maybe you have some veggies that need to be eaten before the next grocery run. This recipe begs for you to use all of those veggies - so feel free to clean out the fridge!
2 TBS cooking fat
1/2 onion, finely chopped
1/2 bell pepper chipped
1 cup sliced mushrooms, any variety
1 cup chopped greens - spinach, kale, chard
6 large eggs, beaten
1 avocado peeled and diced
1/2 tsp salt
1/2 tsp black pepper
Heat skillet over medium heat to melt fat. Add veggies, greens last. Once greens are cooked (will vary based on what you use), add eggs. Keep heat on medium so eggs will not dry out. Cook eggs 5-7 minutes - you want them wet but not runny.
Remove pan from heat and add chopped avocado, salt and pepper.
Lunch
Protein Salad
Again, let's clean out the fridge and try to eat up all of your salad greens.
Use whatever veggies and salad greens you have left. Remember that kale, chard, and even collards make great additions to a salad. I also personally love the peppery flavor of arugula. Top with boiled eggs and walnuts for protein. If you have any cooked chicken or salmon, it would be yummy too. Use one of your home made dressings or just toss with olive oil and vinegar.
Dinner
One Pot Chili

2 large shredded carrots
1 bunch fresh cilantro (for garnish)
2 ripe avocados (for garnish)
3 fresh chopped tomatoes
1/2 can tomato paste
3 garlic cloves
1 tsp paprika
1 tsp sea salt
1 tsp chili powder or to taste
1-2 Tbsp cumin
1 tsp cinnamon
1 chopped onion
1 red and green pepper diced
4 cups shredded zucchini
2 lbs grass fed ground beef
Saute meat until mostly done. Remove from pan and sauté onion, garlic, and peppers in beef grease. Add all ingredients (except avocado and cilantro) to crock pot and add water to 2/3 full. Simmer all day and serve garnished with fresh cilantro and avocado slices.
